Ingredients:
- 500g miss of bread and pizza granozero
- 400g water
- 20g salt
- 50g extra virgin olive oil
- 10g fresh yeast
Method
- Place all ingredients into a rotary mixer.
- Knead for 5 minutes until the dough is fully mixed and smooth.
- Let it rest in a bowl for 40 minutes at a temperature of 28 °C .
- Lay the dough on a board sprinkled with rice flour and divide into the shape of a ciabatta.
- Place the ciabatta on a baking sheet and allow to rise for 40 minutes at 28 °C . AH 75%.
- Bake at 230 °C with steam for 20 - 30 minutes
