You can use ciabatta to make garlic bread, or grilled sandwiches, or simply enjoy it with some salt, pepper, and olive oil. A highly diverse type of bread can be anything you make of it.

  • 500g miss of bread and pizza granozero
  • 400g water
  • 20g salt
  • 50g extra virgin olive oil
  • 10g fresh yeast


  1. Place all ingredients into a rotary mixer.
  2. Knead for 5 minutes until the dough is fully mixed and smooth.
  3. Let it rest in a bowl for 40 minutes at a temperature of 28 °C .
  4. Lay the dough on a board sprinkled with rice flour and divide into the shape of a ciabatta.
  5. Place the ciabatta on a baking sheet and allow to rise for 40 minutes at 28 °C . AH 75%.
  6. Bake at 230 °C with steam for 20 - 30 minutes
